Today's Bountiful Baskets were certainly bountiful! I got:
- 3 bags carrots
- 3 bunches kale (I'm making kale chips with it this time)
- 3 bunches romaine lettuce
- 3 bunches green onions
- 6 English cucumbers (I will be making refrigerator pickles this week since I still have 6 left from last week, too!)
- 1 head bok choy (my mom gave me hers from her organic basket)
- 40 sweet peppers
- 27 Anaheim peppers (I'll be roasting, dicing and freezing these again - so yummy!)
- 5 bunches asparagus (I gave the 6th to my mom)
- 3 big bunches bananas
- 12 mangoes
- 15 oranges
- 30 apples
- 3 pineapple
I also have 3 cantaloupe and 3 pineapple left from last week, plus several mangoes, pears, bananas, apples and oranges.
Here's the menu for the coming week. It's most easy stuff since we have a lot going on in the evenings.
I love seeing your menus! Wondering if some day you will post the WHYS of your choice on becoming Vegan and some recipes... Especially green smoothies, and banana breakfast cookies. Will you be coming sometime soon to SLC? You have got to meet my sweet girl!
ReplyDeleteHi Lisa! At the very least, we'll be coming late this summer to take Joshua to the MTC, so hopefully we can catch up with you then. I promise a "why vegan" post is forthcoming (I did one on my old blog so maybe I can just copy it), but this week I'm working on a giant fundraiser for our adoption and can barely keep track of anything else. I'll post the recipes you want in a new post.
